The zucchini plants in our vegetable garden have gotten out of control! Here's a look at some of our harvest....

These zucchini nut cookies have a sweet cream cheese filling and were quite tasty! Found the
recipe in a Martha Stewart Magazine and decided to try a new recipe with all the surplus squash. It wasn't very hard, but make sure you grease the pan/paper & make smaller cookies than they tell you - more like 2tsp size. Otherwise the cookie spreads too large & falls apart. Also it is important to chill the dough as it prevents them for spreading as much as well!
I also made homemade zucchini nut bread, but failed to photograph it. Perhaps next batch! :)
