This chili has become one of our favorite meals! It's a great (&cheap) meal that serves enough for a large group too.
1. Heat a tbsp or 2 of olive oil in a large pot over low heat. Stir in 1 c. chopped onion and 2 cloves minced garlic, and cook until tender. Mix in 1# lentils (I like to do half red & half green), 1-6oz can of tomato paste, and 1-15 oz can of crushed tomatoes. Pour in 2 qts of water & 2 cups thinly sliced carrots. Season chili with lots chili powder, cumin, paprika, salt, and pepper to taste. Add 1-2 cups chopped celery if preferred. Bring to a boil. Reduce heat to low, cover, and simmer 20 minutes, stirring occasionally.
2. Add 1 can black beans & 1 can pinto beans. Continue cooking about 15 min over low heat, until lentils, carrots, and celery are tender.
>Serve hot! Pour over corn or tortilla chips as a frito pie if you'd like. Garnish w/ optional lettuce, tomato, cheese, sour cream, etc.
Makes a ton of food, so eat, share and freeze!!!
