Ratatouille

      Per the recommendation of my fave Pettit girls, we tried a new recipe for lunch today - Ratatouille!!! None of us had cooked or eaten it before, so after short discussion, we were off to the grocery story for ingredients! Each helper started cutting a different veggie and soon enough, it was in the oven making the house smell amazing....

  
    45 min later, after a few rounds of four square, the timer went off and we excitedly pulled it out of the oven! It looked delightful.


 

   Of course, our veggies are not perfectly equal in diameter and width, making the appearance a tad 'messy'... due to two reasons: we chose veggies based on ripeness and not size, and we sliced them by hand (no mandolin). Not as pretty but just as delicious! Here's the recipe that we followed (mostly). Instead of goat cheese, we topped with a parmesan/romano blend and served it with a side of couscous. I also did not include eggplant, but instead layered sliced fresh tomatoes in with the other veggies.

   Healthy, seasonal, vegetarian, and really (really) tasty!!! Not the dish you would think 3 school girls would ask for, but at the end, everyone was asking for seconds (including me)!
