Tips for eating healthy:
1) Make a plan! Print out a calendar like this ONE and fill in breakfast, lunch and dinner for your week!!!!! (no, I don't do this all the time..... but it sure helps when I do!!!)
2) Wash & cut veggies to prep at beginning of week! Store in tupperware or ziplocs in fridge or freezer for quick access --- huge reduction in prep time!! And there are fresh veggies to snack on if you get the munchies.
3) Make a plan *very important so it gets another slot :)
4) Utilize leftovers well.
5) Find what you like, write those meals down, and rotate through so you don't get bored but also don't forget about them. You don't have to try a new recipe everyday! That's time consuming, stressful and risky.
1. Breakfast Chili
I've made this 3-4x's already and it's a new favorite due to 1) good flavors, 2) pretty easy to make, 3) makes a large amount of food, & 4) freezes well!
2. Chicken Apple Omelet
Easy to make, very flexible with substituting whatever ingredients you have (spinach instead of collard greens, other nuts, other meats, etc). I didn't use strictly egg whites, but did a combo as it mentions in the notes*.

This was soooo good -- it tasted like a dessert!!!

4. Sweet Potato Hash
Dice up sweet potatoes, toss with coconut oil, salt & pepper... Cook in skillet over medium heat until soft and brown, or roast in oven@400. Saute any spare veggies on hand like bell pep, onions, spinach. Serve all together with scrambled eggs, chopped up avocado, & tomato! :)
Lunch:
1. Leftovers from yummy, healthy dinners!
2. Avocado Chicken Salad
Easy to make with leftover chkn or rotisserie; eat with some raw veggies or else in a lettuce wrap!
3. Sweet Potato Sliders
We love eating sweet potatoes in any form or fashion....
To make these: Slice into even coins, brush both sides with melted coconut oil, salt and pepper. Bake in oven @400 for 15min on each side or until golden brown & desired crispness. Eat as a snack, side dish or use with sliders to replace the bun on a burger or pulled pork sandwich! Yum!

Dinner:
1. Pork Butternut Squash Stew
Yummm.... I have not cooked much with butternut squash, but was very pleased with how this turned out! Nice flavor! Feel free to add more veggies (whatever you like)! Served about 5, so not as much as I expected.
2. Sweet Potato Shepherds Pie
Delicious, but definitely more time-consuming! If you have time to cook, it's a great meal tho, even for people that "don't like healthy food"!! Try to plan it in your week so you have leftover veggies to throw in (i.e. I made roasted veggies the day before & added those to the turkey for a super flavorful filling with bell pep, broc, onion, diced sweet pot & green beans) The celery,carrot, onion mixture just isn't very hearty. Making the roux without flour was a little tricky... it required constant attention, and the arrowroot powder was a new ingredient to me. I used some vegetable broth instead of the water to make the sauce even tastier.
3. Italian Vegetable Casserole
An original spin-off on spaghetti casserole... Also, for a simpler meal - feel free to cook a spaghetti squash, scoop it out into bowls, top with italian tky sausage meatballs and tomato sauce!!!!
4. White Chicken Chili
If you're eating beans, this is an easy one-pot meal that can be made crockpot or stove-top, depending on your time restraints. Again, I recommend leftover chicken or rotisserie (buy a family pack and at the beginning of the week, boil/grill them all for future use). And it would probably be fantastic with one of your Comfort Foods salsas!
