So, I recently attempted to make a homemade spinach artichoke dip recipe that I found on the Food Network's website. Surprisingly, this contribution from Paula Deen does not call for any butter. Note, however, the ingredient, cayenne pepper sauce (which I did not have). Not thinking very clearly in my first attempt, I substituted cayenne pepper powder. The thought did cross my mind, "Hmm, the actual powder might be a little stronger than the sauce, so maybe I'll short it." In went, 3/4tbsp cayenne pepper seasoning. It baked for 30 min and came out looking delicious. I took it to our weekly community group night (dinner theme of 'Tailgate Party') and.... WOW was it HOT! Those who can handle the heat thoroughly enjoyed it, but I have to say personally, I was disappointed. For those who know me, I'm a lightweight when it comes to 'hot & spicy'.
So, a few days later I made it for our Superbowl Party at work. This time, only 1/8tsp cayenne pepper went it and I redeemed myself. It tasted delicious! :) I have yet to actually use the sauce, but would probably make it again the same as attempt #2. So, for all of you who think I am a great cook.... just know that we all make mistakes and learn from them!!! :)
Here's the recipe if you'd like to try it!
- 8 cups fresh spinach
- 1 clove garlic, minced
- 1 lemon, zest finely grated
- 2 (14-ounce) cans artichoke hearts, drained and coarsely chopped
- 6 ounces (about 1 1/2 cups) Parmesan, freshly grated, divided
- 3/4 cup sour cream
- 3/4 cup mayonnaise
- 1 tablespoon bottled cayenne pepper sauce
- Kosher salt and freshly ground black pepper
- Serving suggestion: Pita Chips, for dipping
Directions
Preheat oven to 375 degrees F. Spray 1 1/2-quart casserole dish with cooking spray; set aside. Blanch spinach. Squeeze excess water.
In a medium bowl, mix together spinach, garlic and lemon zest. Add artichoke hearts, 1-cup Parmesan, sour cream, mayonnaise and cayenne pepper sauce. Mix. Place into prepared casserole dish. Bake for 30 minutes. The last 5 minutes add the remaining 1/2 cup of Parmesan to the top. Serve hot or cold along with pita chips.

Hi! I saw your post title on Susan's blog and thought I would check out your recipe! Looks good! Could Cayenne Pepper sauce be another way of saying hot sauce? Just a thought! Can't wait to try this!
